Traditional Andhra Avakaya Pickle (1 Kg Mangoes)

 

 

🥭 What is Avakaya?

Avakaya is a famous traditional pickle from Andhra Pradesh made with raw mangoes, mustard powder, red chilli powder, salt, and sesame oil. It is known for its spicy, tangy, and rich flavour and is traditionally prepared during the summer season.

Ingredients for 1 Kg Avakaya Pickle

Raw sour mangoes

1 kg

Mustard powder (Aava Pindi)

200 grams

Red chilli powder

200 grams

Rock salt

180–200 grams

Fenugreek seeds (Methi)

2 tablespoons

Turmeric powder

2 teaspoons

Garlic cloves (optional)

100 grams

Sesame oil (Gingelly oil)

300–350 ml

 

Preparation

 

Step 1: Prepare the Mangoes

·       Wash the raw mangoes thoroughly.

·       Wipe them completely dry using a clean cloth.

·       Cut the mangoes into medium-sized pieces with the hard shell attached.

·       Remove excess moisture completely.

 

Step 3: Mix the Pickle

  • Add mango pieces to the spice mixture.
  • Add garlic cloves if using.
  • Pour sesame oil gradually.
  • Mix thoroughly so all mango pieces are coated evenly.

 

Step 2: Prepare Spice Mix

·       Dry roast fenugreek seeds lightly and grind coarsely.

·       In a large bowl, mix:

»       Mustard powder

»       Red chilli powder

»       Salt

»       Turmeric powder

»       Fenugreek powder

 

Step 4: Storage

  • Transfer the pickle into a clean and dry ceramic or glass jar.
  • Cover tightly.
  • Stir once daily using a dry spoon for 3–4 days.

The pickle becomes ready in about 5–7 days.
